If you are looking for a fail proof steak rub that will require NO steak sauce, with a slightly smoky flavor and kick, this is it right here. I use sirloin when I grill for a group but feel free to use it on your favorite cut. I have found the Omaha Steaks guide to cooking steak extremely helpful so I am including it here.
I find it helpful to rub it on the steak, cling wrap and let it sit for 24 hours ideally, though 2-3 hours will work relatively well. I usually end up with 1 and 1/2 inch steak so I cook it according to the chart, 7 minutes on side 1 and 6 minutes on side 2 for medium.
In case you forget to oil the steak on the first side, because you are frazzled, you are talking to a guest, fret not. Your steak is NOT ruined. Just baste the second side. Flip the steak and baste the cooked side with oil after it's been cooked. That coating will still be helpful in retaining the moisture. How do I know this? Here is how to proceed!
INGREDIENTS:
Sirloin Steak (Trader Joe's)
FOR SPICE RUB
3 tablespoons brown sugar
2 teaspoon kosher salt
1 teaspoon garlic powder
1 teaspoon crushed pepper
1 teaspoon spanish paprika
3/4 teaspoon cumin powder
1/4 teaspoon cayenne pepper
PROCESS:
Take the marinated sirloin out of the refrigerator 30-45 minutes before grilling. It's best when it's at room temperature.
Turn the grill on to high (about 400 degree F)
Unwrap steak and baste the steak with olive oil on the top side.
Place the steak on the grill, oiled side first. Set the timer according to your cut of the steak. 7 minutes if it's a 1 1/2 inch sirloin.
Baste on the other side and close the grill.
Flip and set timer to 6 minutes (or per your cut).
Remove from grill and let rest for about 5 minutes.
Cut into into strips and enjoy!!
